Kel’s Corned Beef and Cabbage Soup, Ninja-Style

With St. Patrick’s Day quickly approaching, I thought I’d share my recipe for this awesome soup for those of you who may have leftover corned beef. This is so easy to assemble and a breeze to make in your Ninja® 3-in-1 cooking system. Don’t have a Ninja yet? I have included instructions on how to make this on your stovetop in the “Preparation” section below.

One of the things I love about this festive soup is that it’s something that you don’t run across every day in stores or restaurants. That’s a shame because it is so delicious. Plus, since March can be quite blustery and cold depending on where you live, a nice hot bowl of this hearty soup is just the ticket. Even if you only make this once a year, you will be glad you did! Savor every drop.

Chipotle Turkey Chili

I love chili, whether it’s my award winning black bean and sausage chili, white bean and chicken chili, vegetarian sweet potato chili or what I call traditional chili (made with beef.) I was cleaning out my pantry (truly a stretch to call a two-shelf cabinet that) and ran across a can of chipotle peppers as well as some great northern beans. If you’re not familiar with chipotle peppers, they are simply smoked-dried jalapeños, and can vary in size and heat.

Anyway, chili immediately came to mind. When I went to the store, ground turkey breast was on sale, so I bought some of that and some red and green bell peppers. Voilà! A hearty, earthy and smoky chili that is also healthy!

Pull-Apart Chicken Thigh and Olive Stew (or Pasta Sauce)

I rarely buy chicken thighs since my family prefers chicken breasts, but there was a great sale on them so I decided to pick some up to cook in my new Ninja cooker. I recalled a wonderful crockpot recipe from my late and wonderful grandmother, Mamma, that combined chicken, olives and canned tomatoes, but that was from my college days and I had no idea where it was. So I improvised and made what turned out to be a delicious dish to be eaten either by itself as a hearty stew, or as a thick sauce served over some sort of pasta. The olives and tomatoes blend wonderfully together and by making this in the slow cooker, all of the flavors have a chance to intensify.

If you don’t have a Ninja, that’s okay – you can use a skillet for the first few steps. Once you brown the chicken and add the seasonings, wine and tomatoes, just transfer it all to the slow cooker and proceed. The Ninja does make the process easier and faster, though.
